In the last audit, <\/span>the NSF International Organization rated Autor Foods with a score of 98.62 out of 100 in IFS Food<\/span><\/a>, so we have decided to write an article in which we explain step by step how to achieve the <\/span>maximum score (\u2265 95%) <\/b>in <\/span>IFS Food <\/b>certification, highlighting the critical aspects and best practices for each phase of the process.<\/span><\/p>\n

The first thing you should know is that the <\/span>IFS Food Standard <\/b><\/a>is an auditing standard that evaluates food safety and the quality of products and processes in the food manufacturing industry. <\/b>Its main purpose is to ensure <\/span>the safety, legality, authenticity and quality <\/b>of products that reach end consumers. It is designed <\/span>for food manufacturers and companies that pack products in bulk.<\/b><\/p>\n

The main objectives of IFS Food certification are:<\/span><\/p>\n

– Ensure food safety <\/b>at every stage of production.<\/span>
\n<\/span>– Ensure product quality <\/b>according to customer specifications.<\/span>
\n<\/span>– Reduce repetitive audits <\/b>by providing a single standard.<\/span>
\n<\/span>– Provide transparency <\/b>throughout the supply chain.<\/span>
\n<\/span>– Optimize risk management <\/b>in food industry companies.<\/span><\/p>\n

Remember that this standard is <\/span>applicable exclusively to food processing companies <\/b>and <\/span>those that perform primary packaging<\/b>.<\/span><\/p>\n

\n<\/b>Understanding the scoring system<\/b><\/h2>\n

The <\/span>IFS scoring system evaluates the degree of compliance with each requirement using a scale <\/b>ranging from full compliance to serious non-compliance. This is how it works:<\/span><\/p>\n

– A (20 points): Full compliance.<\/span>
\n<\/span>– B (15 points): Slight deviation.<\/span>
\n<\/span>– C (5 points): Part of the requirement is not implemented.<\/span>
\n<\/span>– D (-20 points): Requirement has not been implemented.<\/span>
\n<\/span>– Major non-conformance (-15% of the total score).<\/span>
\n<\/span>– KO requirement (-50% of the total score, prevents certification).<\/span><\/p>\n

To obtain the maximum score, it is essential to <\/span>avoid KO requirements and major non-conformities, as <\/b>they may result in the withdrawal of the certificate.<\/span><\/p>\n

Depending on the final score, the result may be:<\/span><\/p>\n

– IFS Food Certification Superior Level (\u226595%)<\/b>.<\/span>
\n<\/span>– IFS Food Basic Level Certification (\u226575%)<\/b>.<\/span>
\n<\/span>– Non-certification (if there are KO requirements or score <75%)<\/b>.<\/span><\/p>\n

Implement a management system<\/b><\/h2>\n

The first step to a successful audit is to have <\/span>a well-structured food safety and quality management system. <\/b>That is why the HACCP plan is the basis of everything. The <\/span>HACCP (Hazard Analysis and Critical Control Point) <\/b>must comply with the codex alimentarius. This means that it must include:<\/span><\/p>\n

– The <\/span>identification of <\/b>physical, chemical, biological and radiological <\/span>hazards<\/b>.<\/span>
\n<\/span>– The definition and validation of <\/span>critical limits<\/b>.<\/span>
\n<\/span>– The <\/span>monitoring and verification <\/b>system for each critical control point.<\/span>
\n<\/span>– The <\/span>corrective action <\/b>plan in case of deviations.<\/span><\/p>\n

Likewise, <\/span>product and raw material specifications<\/b>, <\/span>control and cleaning procedures<\/b>, internal audit and training records, and <\/span>complaint and nonconformity management <\/b>should also be included.<\/span><\/p>\n

For this reason, it is advisable to implement an <\/span>annual training plan <\/b>with periodic sessions, knowledge evaluations and record of attendance and topics taught.<\/span><\/p>\n

Personal hygiene is also a key factor. In fact, compliance with these standards is a <\/span>KO requirement<\/b>. Thus, it must be ensured that the entire workforce complies with these premises:<\/span><\/p>\n

– Wear <\/span>appropriate protective clothing<\/b>.<\/span>
\n<\/span>– Follow strict <\/span>hand washing <\/b>protocols.<\/span>
\n<\/span>– Do not wear jewelry, long fingernails or makeup <\/b>in production areas.<\/span><\/p>\n

Another aspect to be considered is the <\/span>design of the facilities<\/b>. Factories must be designed to avoid cross-contamination. Therefore, there must be <\/span>adequate zoning <\/b>to prevent contamination. In addition, <\/span>ceilings, walls and floors <\/b>must be well <\/span>maintained<\/b>. And, of course, all <\/span>ventilation and drainage systems <\/b>must be in good condition.<\/span><\/p>\n

In addition, <\/span>equipment calibration <\/b>is essential. Measuring equipment (scales, thermometers, metal detectors) must be calibrated regularly and maintenance records must be kept.<\/span><\/p>\n

And all this bearing in mind that <\/span>traceability must be completed in less than 4 hours.<\/b><\/p>\n

In relation to all the above, it is necessary to carry out a <\/span>good management of suppliers and purchases<\/b>. Thus, it is necessary to evaluate suppliers based on three key points:<\/span><\/p>\n

– Standards certification.<\/span>
\n<\/span>– Food safety audits.<\/span>
\n<\/span>– Periodic analysis of raw materials.<\/span><\/p>\n


\n<\/b>Allergens and food defense<\/b><\/h2>\n

The <\/span>prevention of allergen contamination <\/b>in the food industry is crucial and in order to achieve the best IFS certification rating, this point must be taken into account. For this, it is necessary:<\/span><\/p>\n

– Maintain an updated <\/span>list of allergens <\/b>in raw materials.<\/span>
\n<\/span>– Implement <\/span>cleaning protocols <\/b>to avoid cross contamination.<\/span>
\n<\/span>– Correct <\/span>labeling <\/b>of products.<\/span><\/p>\n
